*Shell stock in the Seafood Department is not keeping records for 90-days. The identity of the source of shellstock that are sold or served shall be maintained by retaining shellstock tags or labels for 90-calendar days from the date the container is emptied. New Violation.

*The ice machine in the coffee cafe has thick black mold-like/bacteria-like substance lining the ice releaser. Empty ice and discard. The machine was taken out of service, company was called, and they will clean and sanitize interior surfaces this evening and prior to next use. New Violation.

Notes: *Deli Department - Slicers cleaned/sanitized every 4 hours - logbook present onsite. Open deli meats & cheeses tagged with 7 day sell by date. *This facility uses Lactic Acid as a sanitizer. Levels need to be between 0-7.81. The levels that were measured today were 7.81. EcoLab was called and they will be out to adjust.
